asperges<\/strong> de Navarre, les <strong>artichauts<\/strong>, les <strong>fromages Roncal et Idiaz\u00e1bal<\/strong>, <strong>la chistorra<\/strong> ou <strong>l\u2019agneau<\/strong>, les <strong>poivrons piquillos Lodosa<\/strong>, connus sous le nom de \u00ab l\u2019or rouge \u00bb, sont l\u2019un des produits les plus embl\u00e9matiques de la r\u00e9gion, en raison de leur saveur sucr\u00e9e, de leur chair fine et de leur polyvalence en cuisine.<\/p>\n<p>La qualit\u00e9 de ses produits locaux se retrouve dans ses c\u00e9l\u00e8bres recettes telles que le <strong>rago\u00fbt de l\u00e9gumes<\/strong>, un plat \u00e0 base des meilleurs l\u00e9gumes du verger navarrais, <strong>l\u2019agneau al chilindr\u00f3n<\/strong>, cuit lentement avec des poivrons et de la tomate, la tranches.<\/li>\n<li>Ajoutez un peu de brandade de morue au centre de la couche de poivre.<\/li>\n<li>Enveloppez la brandade avec la couche de poivre pour cr\u00e9er une sorte de ravioli.<\/li>\n<li>Terminez en tartinant chaque raviole d\u2019un pesto de poivre.<\/li>\n<\/ul>\n<p><strong>Pour faire le pesto de poivrons rouges<\/strong><\/p>\n<ul>\n<li>Placez les poivrons rouges entiers sur une plaque \u00e0 p\u00e2tisserie et faites-les r\u00f4tir pendant environ 25 \u00e0 30 minutes en les retournant \u00e0 mi-cuisson.<\/li>\n<li>Une fois r\u00f4tis, placez les poivrons dans un bol et couvrez-les d\u2019un film alimentaire pour les faire suer pendant environ 10 minutes.<\/li>\n<li>Apr\u00e8s ce temps, \u00e9pluchez les poivrons, retirez les graines et coupez-les en gros morceaux.<\/li>\n<li>Dans un bol, ajoutez les morceaux de poivron r\u00f4ti, les feuilles de basilic frais et le parmesan r\u00e2p\u00e9 et m\u00e9langez le m\u00e9lange (en ajoutant progressivement l\u2019huile d\u2019olive) jusqu\u2019\u00e0 ce que tous les ingr\u00e9dients soient bien int\u00e9gr\u00e9s et que le pesto ait une texture
