Every month we are inspired by the gastronomy of a diverse autonomous community from Spain to create a dish using our preserved fish products. Are you ready for the journey?<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Chef Javier Ruiz<\/strong><\/h2>\n\n\n\n<p>Javier Ruiz is one of the greatest chefs on the regional scene in Cantabria and a clear exponent of quality cuisine, ingenuity and innovation. He currently runs La Econ\u00f3mica in Noja (Cantabria), a gastronomic tavern where technique, flavor and creativity are combined in each dish.<\/p>\n\n\n\n<p>The magic happens at La Econ\u00f3mica. Javier uses his culinary art to create unique dishes combining our Cantabrian preserves &#8211; anchovies, white-marinated anchovies, albacore white tuna, cod brandade, tapenade, gildas and banderillas &#8211; with traditional products from each region of the country. The recipes stand out for their creativity and innovation in addition to being delicious.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>First stop\u2026 Cantabria<\/strong><\/h2>\n\n\n\n<p>Of course, the first stop had to be the community of Cantabria!
